We take farmhouse birds and marinate them with our own blend of wild summer herbs like flowering thyme and oregano, adding white wine and garlic
Sherry wine teams up with caramelized spring onions and white soy sauce brings lots of extra umami to the chicken when it's oven-roasting. This gives tender meat on the bottom of the pan as well as deeply crispy skin on the top: Delightful.
Add on some Coconut Basmati Rice to serve the birds on and collect all that great flavor!
Garnish Friends are herby salad, , and plenty of rich broth.
