Elote Corn Ribs
These elotes style corn ribs prepared in the air fryer, on the grill, steamed, in the oven, or even the microwave. Ready in under 20 minutes, these corn “riblets” are bursting with tangy, chili and savory flavors.
Don’t have an air fryer? Prepare these corn ribs in the oven by placing the riblets on lined baking sheet on 425 degrees Fahrenheit for 12-15 minutes until charred and crispy. Alternately you can rock them on the grill and they are ready in minutes.
Prepare a grill for medium-high heat and lightly oil the grates. Place the corn, cut-side down, on the grill. Cook until the cut edges are beginning to char and caramelize, about 8 min. Flip the ribs & cook until the edges are caramelized and the corn kernels are crisp-tender, another 6 to 8 min.
We have rubbed these with a mixture of spices, cheese and fresh cilantro but feel free to finish them any way you like: Lots of things make great garnishes: Limes, Parm, Spicy Mayo, Tajin, BBQ Sauce, Hot Sauce, Ranch, Butter, GO WILD!
